30-Min Fresh and Zesty Lemon Couscous Recipe

Whether served as a light stand-alone dish, or as a side, this textured couscous is healthy, fragrant and irresistible.

Ingredients

  • 200g instant couscous
  • 2 tbs unsalted butter
  • 1/2 cup pitted green olives, sliced
  • Rind of 1/4 preserved lemon, chopped
  • 2 tbs chopped flat-leaf parsley
  • Handful of slivered pistachios
  • 400ml chicken or vegetable stock

Method

  1. Bring stock to the boil, place couscous in a large bowl, then pour stock over couscous. Add butter and mix until it melts.
  2. Let stand for 15 minutes
  3. Mix in olives, lemon and parsley.
  4. Season well and sprinkle the pistachios
